Ultimate Zucchini Appetizer

Ingredients

  • 1 cup mushroom stems and pieces
  • 1/4 cup water
  • 3 cups of winter or summer squash, thinly sliced
  • 1/2 cup onion, finely chopped
  • 2 entire garlic cloves, finely chopped
  • 1 1/3 cup pancake mix
  • 1 TSP baking powder
  • 3/4 cup of Romano or Parmesan cheese, grated
  • 2 TBSP of parsley
  • 1 cup of eggs, slightly beaten
  • 1/4 cup of olive oil
  • dash of salt and pepper
  1. Heat oven to 350 degrees. Grease a 9 by 13-inch pan with cooking spray. In a large bowl, mix all ingredients until squash is well coated.
  2. Spread mixture in pan. Bake until golden brown, about 25 to 30 minutes. (If using a glass pan, reduce temperature to 325 degrees.)
  3. Let cool slightly then cut into 12 squares.
