Ultimate Zucchini Appetizer

Ingredients
- 1 cup mushroom stems and pieces
- 1/4 cup water
- 3 cups of winter or summer squash, thinly sliced
- 1/2 cup onion, finely chopped
- 2 entire garlic cloves, finely chopped
- 1 1/3 cup pancake mix
- 1 TSP baking powder
- 3/4 cup of Romano or Parmesan cheese, grated
- 2 TBSP of parsley
- 1 cup of eggs, slightly beaten
- 1/4 cup of olive oil
- dash of salt and pepper
- Heat oven to 350 degrees. Grease a 9 by 13-inch pan with cooking spray. In a large bowl, mix all ingredients until squash is well coated.
- Spread mixture in pan. Bake until golden brown, about 25 to 30 minutes. (If using a glass pan, reduce temperature to 325 degrees.)
- Let cool slightly then cut into 12 squares.
