Mexican Coffee Cup Scramble

  • 1-2 Eggs, large
  • 1-2 tablespoons Milk
  • 1/4 cup Black or pinto beans, rinsed and drained
  • 1/4 cup Green bell pepper, chopped or sliced green onions
  • 1/4 cup Co-jack cheese, shredded
  • to taste Salt and pepper
  • as desired Salsa
  1. Coat 12-oz. microwave-safe coffee mug with cooking spray. Add eggs and milk; beat until blended. Add beans and green pepper.
  2. Microwave on HIGH 45 seconds, stir
  3. Microwave until eggs are almost set, 30 to 45 seconds longer.
  4. Season with salt and pepper. Top with cheese and salsa.
