Incredibly Easy Lemon Pie
- 1 Large lemon (seeds removed)
- 4 Eggs
- 1 cup Sugar
- 1/4 cup Butter (melted)
- Place cut up lemon and all other ingredients into a blender and blend until smooth.
- Pour into 8-inch piecrust* (unbaked) and bake at 350 degrees for 40 minutes.
*Gingersnap piecrust works well too.
