Ingredients

  • 4 eggs
  • 2 fresh cilantro
  • 2 orange marmalade
  • 1 cup Picante sauce
  • 4 flour tortillas (6-inch)
  • salt and pepper to taste
  • 1 cup spinach, chopped
  • 1/2 cup mushrooms, sliced
  • 1/3 red onion, chopped
  • vegetable cooking spray
  1. Spray a heavy skillet with cooking spray. Place over medium heat, saute onion and mushrooms for 5 minutes. Add eggs and spinach. Cook for 5 to 7 minutes.
  2. Add salt and pepper to taste. In a small bowl, combine Picante sauce, marmalade and cilantro. Divide egg mixture among tortillas. Top with sauce.
