Egg Bagel Sandwich

Ingredients

  • 1 teaspoon oil
  • 2 eggs
  • 2 "everything spice" bagels, toasted
  • 2 tablespoons Reduced-fat veggie cream cheese
  • 2 slices Pepper jack cheese
  • 1/2 Avocado (mashed)
  • 4 slices Tomato
  • as desired Spinach
  1. Heat oil in a non-stick skillet over medium heat. Add eggs and cook 3 to 4 minutes, turning once until eggs are cooked to desired doneness.
  2. To assemble sandwich, spread veggie cream cheese on bottom half of bagels. Top with egg, cheese, avocado, tomato and spinach. Enjoy immediately.
