Ultimate Zucchini Appetizer

Qty Ingredient
4 eggs, slightly beaten
1/4 cupsolive oil
dashsalt and pepper
2 tablespoonsparsley
3/4 cupsRomano or Parmesan cheese, grated
1 teaspoonsbaking powder
1 1/2 cupspancake mix
2 garlic cloves, finely chopped
1/2 cupsonion, finely chopped
1 cupsmushroom stems and pieces
3 cupswinter or summer squash, thinly sliced
1/4 cupswater

Directions:

  1. Heat oven to 350 degrees. Grease a 9 by 13-inch pan with cooking spray. In a large bowl, mix all ingredients until squash is well coated.
  2. Spread mixture in pan. Bake until golden brown, about 25 to 30 minutes. (If using a glass pan, reduce temperature to 325 degrees.)
  3. Let cool slightly then cut into 12 squares.
