1 Garlive clove (minced)
1/2 Red or green pepper (chopped)
1/2 poundsGround turkey
1 teaspoonChili powder

1/3 cupBarbecue sauce
2 tablespoonsKetchup
2 tablespoonsParsely (fresh, chopped)
2 teaspoonsButter
8 Eggs
8 Slider buns (toasted)
2 slicesMozzarella cheese (quartered)

Directions:

  1. Heat oil in large skillet set over medium heat; sauté onion, garlic and pepper for 3 to 5 minutes or until softened. Add turkey; cook for 3 to 5 minutes or until browned. Add chili powder, salt and pepper; cook for 1 minute. Add barbecue sauce and ketchup; simmer for 3 to 5 minutes or until thickened slightly. Stir in parsley. Melt butter in nonstick pan set over medium heat; cook eggs until whites are set and yolks are cooked to desired doneness. Turn eggs over, if desired. Divide turkey mixture evenly over bottoms of buns. Top with cheese and fried eggs; cap with tops of buns.
