Toasty Warm Chicken Salad
|4||eggs, hard-cooked, chopped|
|1/2 cups||seasoned bread crumbs|
|2 teaspoons||lemon juice|
|3 ounces||cream cheese, softened|
|1 cups||celery, chopped|
|1/4 cups||Italian dressing|
|10 ounces||can of chunk chicken|
|1 tablespoons||margarine, melted|
- In a medium bowl, place chicken, Italian dressing, hard-cooked eggs, and celery. In separate bowl blend mayonnaise, cream cheese, lemon juice, and salt until smooth. Stir the two mixtures together and pour into a 9" x 9" glass baking dish.
- Combine margarine and bread crumbs and sprinkle evenly over the top. Microwave on full power for 7-9 minutes or until bubbly.
- This chicken salad can be used as the filling for the cream puffs. Leftover turkey from Thanksgiving dinner can be used as a substitute for the chicken.
