1/2 poundsground meat
1 teaspoonsminced onion
1/2 packagetaco seasoning mix
1/4 cupswater
10 eggs
1 cupscheddar cheese
to tastesalsa
to tastetortilla chips
to tasteshredded lettuce

  1. Brown meat with minced onion in 10-inch skillet. Drain. Add taco seasoning and water; simmer for 2 minutes. Beat eggs and pour over meat mixture.
  2. Cover pan and turn heat to low. Cook 10-12 minutes until eggs are set. Sprinkle with cheese and cover skillet until cheese melts.
  3. Serve with salsa, lettuce, and chips, as desired.
