Sue’s Layered Brunch

Qty Ingredient
1 poundsground beef
15 to 20 tortillas or tortilla chips
3/4 cupsgreen onions, chopped
1 cupstomato, chopped
4.25 ouncesblack olives, chopped
16 ouncessour cream
2 cupsmedium salsa
4 cupscheddar cheese, finely shredded
16 ouncesrefried beans
12 to 18 eggs, beaten
2/3 cupscheddar cheese,shredded

Directions:

  1. Preheat oven to 350°F.
  2. Brown ground beef and set aside to drain. Scramble the eggs. Spread the refried beans into the bottom of a 9 x 13 inch baking dish. Next, layer the ground beef, 2 cups shredded cheese, scrambled eggs, salsa, and the remaining 2 cups of cheese. Bake in the oven for 20 minutes.
  3. Remove from oven and let stand 10-15 minutes. Next, spread with sour cream, top with olives, tomatoes, and green onions.
  4. Serve with warm tortillas to be filled or with tortilla chips for a brunch dip.
  5. Refrigerate any leftovers. Individual portions are wonderful reheated in the microwave.
