Sue’s Layered Brunch

|1 pounds||ground beef|
|15 to 20||tortillas or tortilla chips|
|3/4 cups||green onions, chopped|
|1 cups||tomato, chopped|
|4.25 ounces||black olives, chopped|
|16 ounces||sour cream|
|2 cups||medium salsa|
|4 cups||cheddar cheese, finely shredded|
|16 ounces||refried beans|
|12 to 18||eggs, beaten|
|2/3 cups||cheddar cheese,shredded|
- Preheat oven to 350°F.
- Brown ground beef and set aside to drain. Scramble the eggs. Spread the refried beans into the bottom of a 9 x 13 inch baking dish. Next, layer the ground beef, 2 cups shredded cheese, scrambled eggs, salsa, and the remaining 2 cups of cheese. Bake in the oven for 20 minutes.
- Remove from oven and let stand 10-15 minutes. Next, spread with sour cream, top with olives, tomatoes, and green onions.
- Serve with warm tortillas to be filled or with tortilla chips for a brunch dip.
- Refrigerate any leftovers. Individual portions are wonderful reheated in the microwave.
