Sp-egg-tacular Turkey Taco Frittata

1 teaspoon | Minced onion |
1/2 cup | Cilantro (chopped) |
1/2 package | Taco seasoning |
15 ounces | Black beans |
1/4 cup | Water |
10 | Eggs |
1 cup | Colby jack cheese |
Garnish: | |
as desired | Salsa |
as desired | Sour cream |
as desired | Shredded lettuce |

Directions:
- Brown turkey with minced onion in 10-inch skillet. Mix in taco seasoning. Add cilantro, beans and water. Simmer 2 minutes. Beat eggs and pour over meat mixture. Cover pan and turn heat to low. Cook 10-12 minutes until eggs are set. Sprinkle with cheese and cover skillet until cheese melts. Cut into 8 pieces and serve with your choice of salsa, sour cream and/or shredded lettuce.
