Simple and Satisfying Quiche

|1/3 cups||shredded Colby-Jack cheese|
|1 tablespoons||bacon, crumbled|
|1 tablespoons||chives, chopped|
|1/3 cups||fresh spinach, rolled and cut|
|to taste||salt and pepper|
|1/4 cups||Asiago cheese, shredded|
|2 cups||hash browns, defrosted|
|1||orange, cut into wedges for garnish|
- Preheat oven to 350°F. Generously grease a muffin tin to hold 8 quiches. Mix one egg, hash browns, and Asiago cheese in a bowl. Season the mixture with salt and pepper as desired. Once thoroughly mixed, put ¼ cup of the mixture into each of 8 cups in the tin. Take a spoon and push the mixture to coat the sides as well as the bottom of each cup. Once the mixture is evenly distributed, place in the preheated oven for about 7 minutes or until it begins to turn golden brown.
- While the mixture is cooking, mix the remaining ingredients together (except for the orange). After the hash brown mixture is golden, put 2 tablespoons of the egg mixture into the center of the hash brown mixture. Put back into oven for 15 minutes or until a toothpick inserted in the center comes out clean. Remove from pan and serve with orange garnish.
