Savory Sweet Potato Pie
Serving Size: makes 9 or 10 inch deep dish pie
|2 small or 3 medium||sweet potatoes (salt and pepper optional)|
|1 cup||Fresh spinach leaves|
|1/2 cup||Onion (chopped)|
|1 medium||Bell pepper (chopped)|
|1/2 cup||Feta cheese|
|3/4 cup||Cheddar cheese|
- Preheat oven to 350º.
- Scrub sweet potatoes and poke holes in the skins with a fork or knife. Cook in microwave or oven until soft. Remove skins and mash with potato masher, fork, or pastry blender. Season with salt and pepper if desired.
- In bottom of 9 or 10 inch deep pie plate, layer smashed sweet potatoes. Then layer veggies and feta cheese. Pour eggs over top and sprinkle with cheddar cheese.
- Bake for 35-40 minutes.
