Qty Ingredient
6 hard-cooked eggs, chopped
Tortilla chips
1 tomato, chopped
2 cupslettuce, shredded
1/2 teaspoonschili powder
2 tablespoonsblack olives, sliced
1 tablespoonsonion, minced
1/4 cupscelery, chopped
1/2 cupslow-fat pepper jack cheese, shredded
1/3 cupslight salad dressing
4 tablespoonssalsa

Directions:

  1. Combine eggs, salad dressing, shredded cheese, celery, onions, olives, and chili powder. Mix lightly. Chill.
  2. For each serving, place a handful of tortilla chips on plate; top with 1/2 cup lettuce, 1/4 of the Sante Fe Egg mixture, 1/4 of tomatoes and 1 tablespoon salsa. Serve.
