|4||sweet peppers (green, yellow, or red)|
|1/2 cups||rice, cooked|
|1 cups||bacon, cooked|
|1 cups||Co-Jack cheese|
- Cut the tops off the peppers and remove the seeds (wash all vegetables). In a medium size bowl, beat the eggs and milk together. Stir in salt and salsa. Add broccoli, rice, ¾ cup bacon, and ¾ cup of cheese.
- Stand peppers in custard cups. Fill the peppers 2/3 to ¾ of the way full with the mixture.
- Place the peppers in the cups on a plate, platter, or tray. Microwave peppers on full power for 10-14 minutes.
- Let stand for 5 minutes. Sprinkle with remaining bacon and cheese. Serve.
