Peachy Keen Eggs

1/3 boxJiffy brand corn bread mix (1/ 3 of 8.5 oz box)
10 ouncesfrozen peaches, thawed
1/2 cupssugar
1/4 teaspoonsChinese 5 spice powder
8 eggs
1 cupssmall-curd cottage cheese
1 cupswhole milk
garnishblueberries

Directions:

  1. Preheat oven to 375°F. Lightly spray a 9x13-inch pan with non-stick cooking spray. Sprinkle corn bread mix evenly over the bottom of the pan. Spread peaches on top of corn bread mix. In a small bowl, mix sugar and 5 spice powder. Sprinkle over peaches. Break eggs into a medium mixing bowl. Add milk and cottage cheese. Beat together for about one minute on medium speed.
  2. Pour mixture over peaches. Bake for 40-45 minutes. Make sure the eggs are set (no liquid). Garnish with blueberries.
