Peachy Keen Eggs

|1/3 box||Jiffy brand corn bread mix (1/ 3 of 8.5 oz box)|
|10 ounces||frozen peaches, thawed|
|1/4 teaspoons||Chinese 5 spice powder|
|1 cups||small-curd cottage cheese|
|1 cups||whole milk|
- Preheat oven to 375°F. Lightly spray a 9x13-inch pan with non-stick cooking spray. Sprinkle corn bread mix evenly over the bottom of the pan. Spread peaches on top of corn bread mix. In a small bowl, mix sugar and 5 spice powder. Sprinkle over peaches. Break eggs into a medium mixing bowl. Add milk and cottage cheese. Beat together for about one minute on medium speed.
- Pour mixture over peaches. Bake for 40-45 minutes. Make sure the eggs are set (no liquid). Garnish with blueberries.
