Mango/Lime French Toast

1/2 cupsbutter, melted
16 sliceswhole wheat or white bread
1/2 teaspoonscinnamon
2 teaspoonslime peel, grated
1/4 cupssugar
1 cupsmango juice
1 cupsmilk
6 eggs
1 teaspoonscinnamon
1/4 cupshoney
2 mangos, sliced

Directions:

Makes 16 slices

  1. Heat oven to 400°F.
  2. In small bowl, combine butter, honey and 1 teaspoon cinnamon; mix well.
  3. Pour mixture evenly into 2 ungreased 15 x 10 x 1 inch baking pans.
  4. In medium bowl, slightly beat eggs. Add milk, mango juice, sugar, lime peel, salt and ½ teaspoon cinnamon; mix well.
  5. Dip bread in egg mixture. Place on top of butter mixture in pans. Pour any remaining egg mixture over bread.
  6. Bake at 400°F for 10 minutes and turn slices over. Bake an additional 10 minutes or until golden brown.
  7. Arrange on serving platter with mango and lime slices.
  8. At this point, bread could be covered and refrigerated overnight.
  9. Uncover and bake as directed.
