Incredibly Easy Pumpkin & Pecan Bars

1 1/4 cupsall-purpose flour
1 containerwhipped topping
1 teaspoonssalt
1/2 teaspoonsground clove
1/2 teaspoonsground nutmeg
2 teaspoonsground cinnamon
28 ouncessweetened condensed milk
29 ouncesLibbys Pumpkin Mix
4 eggs
2/3 cupsbutter, melted
1/2 cupspecans, chopped
1/2 cupsbrown sugar, packed
3/4 cupsoats (quick or old-fashioned)

Directions:

  1. Preheat oven to 350°F. In a 2-quart mixing bowl, combine flour, oats, brown sugar and chopped pecans. Melt butter in the microwave on HIGH for 1 minute or until melted. Add to dry ingredients; mix well. Press mixture using fingers onto bottom of 10” x 15” jelly roll pan. Bake 15 minutes. Meanwhile, lightly beat eggs in batter bowl using a whisk.
  2. Add pumpkin, sweetened condensed milk, spices and salt; whisk until smooth. Pour over crust and spread. Bake 30-35 minutes or until filling is set and knife inserted in center comes out clean. Let cool at room temperature. Cut into squares and serve. Garnish each serving with dollop of whipped topping, pecan halves and additional ground cinnamon. Refrigerate any leftover pie squares. 24 servings.
This recipe can be made in a 9” square baking pan- divide ingredient amounts in half and bake as directed. -You can substitute 3 1/2 teaspoons pumpkin pie spice for the ground cinnamon,  ginger and nutmeg.
