Heavenly Hash Cake

1/2 cupButter (softened)
1/2 cupApplesauce
1 cupWhite sugar
1 3/4 cupsPowrered sugar
4 Eggs
2 teaspoonsVanilla extract
1 1/2 cupsSelf-rising flour
1/4 cupUnsweetened cocoa powder
1 cupGranola
Topping:
8 ouncesMiniature marshmallows
Frosting:
4 tablespoonsButter (melted)
4 cupsPowdered sugar
1/4 cupUnsweetened cocoa powder
1/2 cupEvaporated Milk

Directions:

  1. Preheat oven to 350°.
  2. Grease and flour 9x13 baking pan.
  3. In large mixing bowl, cream 1/2 cup butter, applesauce, white sugar, and 1 3/4 cup powdered sugar. Add eggs one at a time, mixing well after each addition. Add vanilla and mix to incorporate.
  4. In a separate bowl, mix flour and cocoa together. Add the egg mixture and mix well to combine. Add granola and mix to combine. Pour into prepared pan and bake for 40 minutes.
  5. While still how, cover cake with mini marshmallows. Let cool.
  6. To make frosting: in small bowl combine 4 Tbsp. melted butter, 4 cups powdered sugar, 4 Tbsp. cocoa, and 1/2 cup evaporated milk. Spread evenly over cake. Cut and enjoy.
