Fun Dish Brunch

|2 1/2 cups||boiled or baked potatoes, diced|
|2 1/2 cups||fresh or frozen broccoli florets|
|1 ounces||ranch dressing mix|
|8 ounces||low or no fat ham, cubed or chopped|
|6 to 8||eggs|
|1/4 cups||skim milk|
|1/4 cups||Italian seasoned breadcrumbs|
|2 cups||Swiss cheese, shredded|
|1/2 cups||tomato, chopped|
- Preheat oven to 350°F. In a large bowl, toss together potatoes, broccoli, and dry dressing mix. Pour into a greased 2 qt casserole dish. Sprinkle chopped ham, ½ cup cheese, and ½ of breadcrumbs over potato mixture.
- Beat eggs and milk together and pour over ham. Bake uncovered for 30 minutes. Remove from oven and sprinkle with remaining cheese and breadcrumbs.
- Return to oven and bake an additional 10 minutes. Remove from oven and sprinkle with chopped tomato. Let stand 10 minutes before serving.
- With the recipe, you can be creative. Use the potatoes with or without peels; vary the type of cheeses, breadcrumbs, and veggies. It’s a fun recipe!
