Fiesta Party Puffs

Serving Size: Makes approximately 45 puffs.

Dough:
1 cupswater
1/2 cupsbutter
1 cupsall-purpose flour
4 eggs
1-ounce slicesFilling:
6 eggs, hard-boiled, finely chopped
1 cupsblack bean and white corn salsa (or salsa of your choice)
1/4 cupssour cream
1/4 cupsmayonnaise or salad dressing
1/3 cupscheddar cheese, shredded
6 green onions, thinly sliced
1/4 teaspoonsground black pepper
1 tablespoonstaco seasoning mix
1 cupswater
1/2 teaspoonsfresh cilantro, chopped
1/2 cupsbutter
1 cupsall-purpose flour

Directions:

  1. Preheat oven to 400 degrees F.
  2. In a medium saucepan over medium heat, bring water and butter to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until the mixture is smooth and shiny. Drop dough by teaspoonfuls two inches apart onto greased baking sheets.
  3. Bake for 20-25 minutes or until lightly browned. Immediately cut a slit into each puff to allow steam to escape. Cool completely on wire racks.
  4. In a bowl combine the filling ingredients and then refrigerate to allow the flavors to blend. Meanwhile, split puffs and remove soft dough from inside. Just before serving, spoon egg mixture into puffs; replace tops. Makes 45 puffs.
