Fiesta Egg Party Dip

7 eggs
5 sprigscilantro, chopped
14 ouncesblack olives
1 cupsscallions, chopped
2 cupstomatoes, chopped
1 tablespoonslow fat milk
1 cupslow fat sour cream
1/2 teaspoonssalt
14 ouncesrefried black beans
1 cupslow fat cheddar cheese, shredded
1 1/4 cupsgreen salsa

Directions:

  1. Preheat oven to 350 degrees. Grease a 9 by 13-inch pan with cooking spray. In a large bowl, combine eggs, salsa, and cheddar cheese. Spread the egg mixture in prepared pan.
  2. Bake for 15 to 18 minutes until set. Microwave for 1 minute. Evenly spread beans over baked eggs.
  3. Mix together sour cream, milk, and salt; spread over the bean layer.
  4. In diagonal rows across the top of the dish, alternate rows of tomatoes, scallions, olives, and cilantro; repeat until dish is covered. Serve with tortilla chips.
