Eggs-O-Elvis

Qty Ingredient
4 bagels, split and toasted
2 bananas
8 slicescheese
8 slicesCanadian bacon
8 eggs
Peanut Butter Elvis sauce
1/3 cupspeanut butter
1/4 teaspoonssalt
1/4 cupsbutter, melted

Directions:

  1. Arrange bagels on serving platter and keep warm. Poach eggs. Saute bacon and bananas for about 3 minutes on both sides. Arrange bananas and bacon on bagels. Place cheese on egg and place on top of bananas and bacon. Top with peanut butter Elvis sauce. Garnish with black olives and parsley, if desired.
  2. Peanut Butter Elvis sauce: In small pan, melt butter till bubbling on sides. Put peanut butter and salt in bowl. Gradually add the hot butter, mix until smooth.
