Egg Bagel Sandwich

2 eggs
2 "everything spice" bagels, toasted
2 tablespoonsReduced-fat veggie cream cheese
2 slicesPepper jack cheese
1/2 Avocado (mashed)
4 slicesTomato
as desiredSpinach

Directions:

Step 1: Heat oil in a non-stick skillet over medium heat. Add eggs and cook 3 to 4 minutes, turning once until eggs are cooked to desired doneness. Step 2: To assemble sandwich, spread veggie cream cheese on bottom half of bagels. Top with egg, cheese, avocado, tomato and spinach. Enjoy immediately.
