1 cupssauerkraut
1 cupsVelveeta cheese, cubed OR mild, medium, or sharp cheddar cheese
1/2 cupsRussian dressing
1/2 jalapeno pepper, chopped
1 tomato, chopped
1 cupscooked corned beef
1 cupssauerkraut
4 fried eggs
1 cupsVelveeta cheese, cubed OR mild, medium, or sharp cheddar cheese
1/2 cupsRussian dressing
1/2 jalapeno pepper, chopped

Directions:

  1. In a 9x9” pan, spread:
    1 cup sauerkraut
    1 cup cooked corned beef
    1 chopped tomato
    ½ chopped jalapeno pepper
    ½ cup Russian dressing
    1 cup Velveeta cheese cubed or mild, medium or sharp cheddar cheese
  2. Top with: 4 fried eggs
  3. Bake in 350 degree oven for 30 minutes
  4. Serves 4
