8 eggs
1 tablespoonsbutter or margarine
1/2 teaspoonssalt
3/4 cupsthick and chunky salsa
1/2 cupslow-fat cheddar cheese, grated
8 slicesbacon, cooked and crumbled
1/4 cupsgreen pepper, diced
1/4 cupsred bell pepper, diced
1/4 cupsgreen onion, sliced
2.25 ouncesblack olives, sliced
10 ouncesrefrigerated pizza dough
8 eggs, slightly beaten
1 1/2 cupschicken, cooked and cubed
3/4 cupsbarbeque sauce
1 1/2 cupslow-fat Monterey Jack cheese, grated
2/3 cupsred onion, finely chopped
1 cupsnonfat milk
8 dropsTabasco sauce
1/2 cupsbuttermilk pancake mix, sifted
to tastesalt and pepper
1/3 cupsfresh cilantro, chopped
1 cupsMonterey Jack cheese, grated

Directions:

  1. In a medium bowl, combine cubed chicken with barbeque sauce until thoroughly coated. Stir in cheese and red onion. Pour mixture into a greased 10-inch pie plate.
  2. Whisk eggs with milk, Tabasco sauce, pancake mix, salt and pepper, until well blended. Pour egg mixture over chicken; bake at 400 degrees for 40 to 50 minutes, or until knife inserted comes out clean. Sprinkle with chopped cilantro and slice into wedges.
