Chili Egg Puff

5 eggs
1/4 cupsflour
1/2 teaspoonsbaking powder
1/4 teaspoonssalt
1/4 poundssharp cheddar cheese block
1/2 poundsJack cheese block
8 ouncescottage cheese
4 ouncesdiced green chilies
1/4 cupsbutter, melted

Directions:

  1. Preheat oven to 375°F. In a medium bowl, beat eggs, then add flour, baking powder and salt, mixing until smooth. Cut Cheddar and Jack cheeses into small cubes.
  2. Mix cheeses, chilies and melted butter with the egg mixture. Pour into a buttered 7x11-inch pan and bake for 30 minutes. Let cool for a few minutes to set before serving.
