Brunch Burritos

Qty Ingredient
1 poundsraw shrimp, peeled and devaned
1 containerspreadable cream cheese
1 tablespoonsoil
3 tablespoonsmilk
1/2 teaspoonsdried cilantro
1/4 teaspoonsCayenne pepper
1/4 cupsred pepper, chopped
1/4 cupsonions, chopped
7 eggs
10 to 12 8" flour tortillas
1 poundsraw shrimp, peeled and devaned
salsa

Directions:

  1. In a skillet, heat the oil; add red pepper, onion and shrimp. Sauté until shrimp is about halfway done. In a bowl beat the eggs, milk, cayenne, and cilantro. Add to the shrimp and vegetables and scramble together.
  2. While egg mixture is cooking, spread a thin layer of cream cheese one each of the tortillas. Fill with egg mixture, top with a dollop of salsa and roll into burritos.
