Broccoli Cornbread

Qty Ingredient
1 stickmargarine, softened
8.5 ouncesJiffy corn muffin mix
1 3/4 cupssharp cheddar cheese, grated
1 medium Vidalia onion
10 ouncesbroccoli, frozen, chopped, thawed, drained
3/4 cupscreamed corn
5 large eggs

Directions:

  1. Preheat oven to 350°F. Stir all of the above ingredients in a large bowl.
  2. Well grease a 10" cast iron skillet.
  3. Spread above mixture evenly into the skillet.
  4. Bake at 350°F for 45 minutes. Serve warm with butter.
