Blue Cheese-Egg Dip
|2||hard-boiled eggs, peeled and coarsley chopped|
|2 cups||crumbled blue cheese|
|1 1/2 teaspoons||lemon juice|
|1/2 cups||plain yogurt|
|as desired||carrot or celery sticks or Buffalo wings|
|as desired||additional crumbled blue cheese|
- Place eggs, blue cheese, lemon juice and yogurt in a blender or food processor.
- Cover and blend or process until smooth. Transfer to serving bowl.
- Sprinkle with additional blue cheese. Serve the dip with carrot or celery sticks or Buffalo wings. Makes 2 cups.
