Egg Bagel Sandwich

Serving Size: 2 

Ingredients

  • 1 teaspoon oil
  • 2 eggs
  • 2 "everything spice" bagels, toasted
  • 2 tablespoons Reduced-fat veggie cream cheese
  • 2 slices Pepper jack cheese
  • 1/2 Avocado (mashed)
  • 4 slices Tomato
  • as desired Spinach

Directions

Step 1: Heat oil in a non-stick skillet over medium heat. Add eggs and cook 3 to 4 minutes, turning once until eggs are cooked to desired doneness. 

Step 2: To assemble sandwich, spread veggie cream cheese on bottom half of bagels. Top with egg, cheese, avocado, tomato and spinach. Enjoy immediately.
