1 loaf white
bread, cubed
(suggest French or Vienna)
2 cups cooked turkey *
1 cup Swiss cheese, shredded
1 cup Mozzarella cheese, shredded
3 ¼ cups milk
12 large eggs, beaten
1 teaspoon salt
1 ½ teaspoons poultry seasoning (or Mrs. Dash)
1 (8 ounce) can mushrooms, drained
Lightly grease a 9 x 13 inch pan. Place bread cubes in pan. Arrange
cooked turkey and mushrooms over bread. Whisk together milk, eggs
and seasoning. Pour over bread, turkey and mushrooms. Cover pan
and refrigerate overnight. Remove covering and bake at 350°F
for 30 minutes. Remove and spread shredded cheese over the top and
bake for another 30 minutes. Strata should be done when a knife
inserted comes out clean. Serve warm.
* leftover Thanksgiving turkey works well!
