  Peaches and Pecan Puff

Peaches and Pecan Puff

Ingredients:

28 saltine crackers
6 eggs, divided
1 1/2 cup sugar
1/2 teaspoon baking powder
1 cup pecans, chopped
2 teaspoons vanilla
1 large (29 ounce) can sliced peaches

Directions:

Crush crackers to a fine consistency.  Separate egg whites from yolks and reserve the yolks for later.  Beat the 6 egg whites until stiff peaks just begin to form.  Add the sugar gradually, beating well.  Mix together the crackers and baking powder and stir into egg white mixture.  Stir in pecans and vanilla.  Spread in a 8 x 12 inch lightly greased baking dish.  Bake in 350° oven for 30-35 minutes.  Cool.  Arrange peaches over cooled crust.

(Topping)
6 egg yolks, (reserved from above)
1/4 cup sugar
1/4 teaspoon salt
1 1/4 cup milk
2 tablespoons orange juice
1 teaspoon vanilla
1 tablespoon butter or margarine

In a heavy saucepan, mix together the eggs, sugar, and salt.  Gradually add milk.  Heat over medium-low heat until mixture coats a spoon.  Do not boil.  Stir in the orange juice, vanilla, and butter.  Cool and then pour over the peaches.  Garnish with whipped cream.
