  Eggs-O-Elvis

Eggs-O-Elvis


Contestant:  Jake Hively

Ingredients:

4 bagels, split and toasted
8 eggs
8 slices Canadian bacon
8 slices of cheese
2 bananas

Directions:

Arrange bagels on serving platter and keep warm.  Poach eggs.  Saute bacon and bananas for about 3 minutes on both sides.  Arrange bananas and bacon on bagels.  Place cheese on egg and place on top of bananas and bacon.  Top with peanut butter Elvis sauce.  Garnish with black olives and parsley, if desired.

(Ingredients for Peanut Butter Elvis sauce):

1/3 cup peanut butter
1/4 teaspoon salt
1/4 cup butter, melted

In small pan, melt butter till bubbling on sides.  Put peanut butter and salt in bowl.  Gradually add the hot butter, mix until smooth.
