Serves: 8-10
Ingredients:
1 pizza crust mix (Robin Hood)
10 hard-cooked eggs
½ can cream of chicken soup
½ can cream of mushroom soup
¼ cup milk
1 cup diced ham and/or dried beef cut up
1 cup shredded cheddar cheese
8 oz. freshly sliced mushrooms (or use a small can)
1 can drained sliced water chestnuts
1 medium onion, chopped
1 cup chopped celery and/or ½ cup chopped green pepper
3 tablespoons butter
additional cheese
Directions:
Preheat oven to 350°F.
Mix pizza crust according to box. Cover and let stand 5 minutes. With greased hands, shape dough into 9x12 greased pan, forming a 1-inch rim around edge.
Mix soups together. Add milk, beef, ham, and cheese. Set this aside.
Saute the mushrooms, water chestnuts, onion, celery and/or green pepper in butter until heated through. Drain and set aside.
Spread the soup mixture on the crust. Slice eggs and lay on the soup mixture. Sprinkle the rest of the ingredients over the eggs. Sprinkle a few chopped up grape tomatoes over top for color.
Bake for 30 minutes or until crust is golden brown. Remove from oven. Sprinkle an additional ½ - ¾ cup cheddar cheese over top. Put back in oven until cheese melts.
