  Easy Breakfast Lasagna



Contestant: C.J. Duke

Ingredients:

6 precooked frozen lasagna noodles, thawed
½ lb. turkey sausage
8 eggs
¼ c. cooked spinach
3 oz. fat-free cream cheese
¼ c. salsa
½ c. shredded cheddar/jack cheese

In a skillet cook sausage, drain and set aside. In a mixing bowl, whisk eggs together. Cook eggs in skillet until scrambled and set aside. Mix sausage, spinach, cream cheese, and salsa. Lay lasagna noodles out flat. Spread with sausage mixture; top with eggs and shredded cheese. Roll up. Lay in 9x9” square pan. Top with additional cheese. Warm in microwave on high for 10 minutes or until heated through.
