Serves: 6
Ingredients:
2 ½ cups boiled or baked potatoes, diced
2 ½ cups fresh or frozen broccoli florets
1 oz. packet of ranch dressing mix
8 oz. cubed or chopped ham, low or no fat
6-8 eggs
¼ cup skim milk
¼ cup Italian seasoned breadcrumbs
2 cups Swiss cheese, shredded
½ cup tomato, chopped
Directions:
Preheat oven to 350°F. In a large bowl, toss together potatoes, broccoli, and dry dressing mix. Pour into a greased 2 qt casserole dish. Sprinkle chopped ham, ½ cup cheese, and ½ of breadcrumbs over potato mixture. Beat eggs and milk together and pour over ham. Bake uncovered for 30 minutes. Remove from oven and sprinkle with remaining cheese and breadcrumbs. Return to oven and bake an additional 10 minutes. Remove from oven and sprinkle with chopped tomato. Let stand 10 minutes before serving.
With the recipe, you can be creative. Use the potatoes with or without peels; vary the type of cheeses, breadcrumbs, and veggies. It’s a fun recipe!
