  Brunch Burritos



Contestant: Michelle Phillips
Makes: 10-12

Ingredients:

1 lb. raw shrimp, peeled and devaned
10-12 8” flour tortillas
7 eggs
¼ cup chopped onions
¼ cup chopped red pepper
¼ teaspoon Cayenne pepper
½ teaspoon dried cilantro
3 Tablespoons milk
1 Tablespoon oil
1 container spreadable cream cheese
Salsa

Directions:

In a skillet, heat the oil; add red pepper, onion and shrimp. Sauté until shrimp is about halfway done. In a bowl beat the eggs, milk, cayenne, and cilantro. Add to the shrimp and vegetables and scramble together. While egg mixture is cooking, spread a thin layer of cream cheese one each of the tortillas. Fill with egg mixture, top with a dollop of salsa and roll into burritos.
