  Pot-O-Gold Peppers



Contestant: Renee Schrock - Student Fourth Place

Ingredients:

4 sweet peppers (green, yellow, or red) approx. 4 ounces each
4 eggs
½ cup milk
1 teaspoon salt
½ cup salsa
½ cup broccoli
½ cup rice, cooked
1 cup bacon, cooked
1 cup Co-Jack cheese
Low-fat sour cream, as needed

Directions:

Cut the tops off the peppers and remove the seeds (wash all vegetables). In a medium size bowl, beat the eggs and milk together. Stir in salt and salsa. Add broccoli, rice, ¾ cup bacon, and ¾ cup of cheese.

Stand peppers in custard cups. Fill the peppers 2/3 to ¾ of the way full with the mixture.

Place the peppers in the cups on a plate, platter, or tray. Microwave peppers on full power for 6 minutes. Rotate the plate 180º. Cook then on 50% power rotating the plate every 3 minutes, until a knife can be inserted into the center and comes out clean (about 10-14 minutes). Peppers may vary; remove each pepper as it is done.

Let stand for 5 minutes. Top with sour cream. Sprinkle with remaining bacon and cheese. Serve.
