  Sue's Layered Brunch - 2002 "Egg-stravaganza Contest"- Adult Fourth place


Contestant: Susan Courtney

Ingredients:

1 lb. ground beef
12 - 18 eggs, beaten
1 - 16 oz can refried beans
4 cups cheddar cheese, finely shredded
2 cups medium salsa
1 - 16 oz container of sour cream
1- 4.25 oz can black olives, chopped
1 cup tomatoes, chopped
¾ cup green onions, chopped
15-20 tortillas or tortilla chips

Directions:

Preheat oven to 350°F.

Brown ground beef and set aside to drain. Scramble the eggs. Spread the refried beans into the bottom of a 9 x 13 inch baking dish. Next, layer the ground beef, 2 cups shredded cheese, scrambled eggs, salsa, and the remaining 2 cups of cheese. Bake in the oven for 20 minutes. Remove from oven and let stand 10-15 minutes. Next, spread with sour cream, top with olives, tomatoes, and green onions. Serve with warm tortillas to be filled or with tortilla chips for a brunch dip.

Refrigerate any leftovers. Individual portions are wonderful reheated in the microwave.
