  Breakfast Loaf - 2002 "Egg-stravaganza Contest"- Student third place


Contestant: Tessa Moser

Ingredients:

3 ½ cups flour
¼ cup sugar
1 teaspoon salt
½ teaspoon onion flakes
1 teaspoon Italian seasoning
1 tablespoon yeast
1 tablespoon butter, softened
1 cup warm water
8 eggs
¼ cup milk
2 cups sausage, browned
2/3 cups shredded mozzarella cheese
2/3 cups shredded cheddar cheese

Directions:

Preheat oven to 400°F.

Prepare the bread recipe. Layer the first 7 ingredients in a food processor and pour in 1 cup warm water (110 degrees). Knead dough with food processor for several minutes. Add a small amount of flour, if needed, until dough forms a nice ball. Place on a floured board.

Next, brown sausage. Then, beat 6-8 eggs and ¼ cup milk. Scramble in a non-stick pan until firm.

Roll out bread into a 10 x 16 inch rectangle. Place scrambled eggs down the center. Top with sausage and cheddar and mozzarella cheeses. With pizza wheel, cut dough in from both sides at an angle, 1 inch strips and braid over center ingredients to form loaf. Bake for 15 minutes or until done. Slice and serve with salsa.
