Ingredients:
1 stick of margarine, softened to room temperature
1- 8.5 oz. box Jiffy corn muffin mix
1 ¾ cup grated sharp cheddar cheese (other cheeses may be
substituted)
1 medium Vidalia onion
1- 10 oz. package frozen, chopped broccoli, thawed and drained
¾ cup creamed corn
5 large eggs
Directions:
Preheat oven to 350°F. Stir all of the above ingredients in
a large bowl. Well grease a 10" cast iron skillet. Spread above
mixture evenly into the skillet. Bake at 350°F for 45 minutes.
Serve warm with butter.
